Bourbon, Whiskey, & Cognac

You've heard the line that all bourbon is whiskey, but not all whiskey is bourbon and we're here to tell you why, as well as how they both differ from cognac.

Whiskey is made from distilled grain mash--usually barley, but also wheat, rye, or corn—that is then stored in oak barrels. Whiskey is made all over the world, but the most popular styles are Scotch, Irish Whiskey, and American Whiskey, each with their own unique flavor profile. The most common type of American Whiskey is bourbon, but bourbon has to be classified separately due to the stringent criteria it must meet.

To be a bourbon, the spirit must consist of 51% corn and be made in the USA. It must be aged in new charred oak barrels and be distilled to no more than 160 proof, but it must enter the barrel at 125 proof. Lastly, it can’t be bottled at under 80 proof and can have no additives, flavoring, or coloring.

Cognac, though similar tasting, is actually quite different. Made from fermented grapes instead of grain, Cognac is a form of brandy, not whiskey. To be considered a Cognac, it must be made in the Cognac region of France, distilled twice in copper pot stills, and aged for at least 2 years in French oak barrels.
